Welcome to #ScrumptiousSaturday! You might be noticing a theme going on here these past few weeks, and I'm going to continue going with it. I feel like I can never have too many recipes for warm and hearty soups in the winter, and I'll just assume you all feel the same way! After all, there's nothing like the coziness of a soup cooking in your kitchen on a cold winter's day- or night- and I can't think of anything I'd rather eat when it's cold and raw outside. This week we have a recipe for Hearty Lentil Soup that will nourish your body and spirit. Did you know that lentil soup makes a satisfying vegan meal when you serve it with some crusty bread? Lentils are a good source of protein, iron, and fiber, so this soup is a winner in both taste and nutrition! And since we're all about saving money, this soup wins in that department, too, since you can cook up a large pot of lentil soup for just a few dollars!

Hearty Lentil Soup

(adapted from Mother Nature Network)

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 onion, finely chopped
  • 1 celery stalk, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1 cup lentils, rinsed
  • 1 can diced tomatoes, including liquid
  • 4 cups vegetable stock
  • 1 pinch each of sea salt and freshly ground pepper, to taste/li>
Prep and cook time 1 hour, 5 minutes; yields 6-8 servings.

Instructions:

  1. In a large soup pot, heat the olive oil and add the onions. Cook them for about 5 minutes or until they turn translucent.
  2. Add in the celery and carrots, and cook another 5 minutes or until they soften.
  3. Add in the thyme, oregano, paprika and cayenne pepper along with the lentils, and stir until lentils and vegetables are coated with the spices.
  4. Add the tomatoes and vegetable stock. Heat the soup to boiling, then reduce the heat and allow the soup to simmer until the lentils are cooked through, about 25-30 minutes.
